View Full Version : Yummy yogurt pancakes!

Annabel Karmel's First Meals recipes often feel "over the top" (I will not be making DS chicken sausage to look like snails with carrot and pea "feelers" and cabbage "grass"!)

However, the recipes have given me some new ideas and 1 year old DS LOVED these pancakes:

1 egg, lightly beaten
2/3 c. full fat yogurt (I used S. Field's 6 oz vanilla)
2/3 c milk
1 1/4 c self-raising flour (I used whatever was in the cupboard! LOL)
1/4 tsp salt or 2 tbsp maple syrup (I just used a pinch of salt)

Mix together beaten egg and yogurt. Stir in milk, flour and salt or maple syrup. Mix until smooth.

Heat pan with a little veg. oil and cook...

She says to drizzle syrup on them, but DS liked them plain and also with a little yogurt on top.

Layer btwn waxed paper and freeze for more breakfasts or snacks.

yum. I have all those items in my fridge/pantry. I think I can, I think I can... my pancakes usually turn out weird shape/puffiness.
