Something that won't clutter up the parent's house? Something consumable maybe? A practical package like a snack/lunch box or container and several healthy snack items like freeze-dried fruits, veggie chips for on the go? Something easily used up like bath crayons? Or, if it has to be something material, a small-ish toy that she would LOVE? What would a 1yo and/or her parents like? Help!

A Zoo membership or a membership to a museum or something along those lines...
My nephew received 1 share of a company when he turned one. Don't remember what it was, but it was purchased on-line and came frames and everything - really cute!

I wouldn't do food.
I was going to say zoo membership.
For a friend's 1 yr old I did gift certificate to a photographer that I knew she liked. I split the gift with another friend of hers so it was about $35-$40 each for the $75 session which included some prints.
I would have liked to receive for DS a my 1st art supplies type box. That's consumable - sorta.

My girls got these for their baptism and they're cute but practical. I love the idea of saving from an early age. They will admittedly add a little clutter, but they can be stuck on a shelf and won't get in the way.
I like the membership idea too, but usually one year olds don't have to pay, do they?

What is your budget? I like the zoo/museum membership idea, but that is pricey. GC for little gym or similar would be fun too. Some less expensive ideas:
cute hair clips?
fun CD?
books? (granted this may add to the clutter, but kids need books and borrowing the library's board books gives me the heebie geebies and I'm nowhere close to a germaphobe.)
a really cute one-of-a-kind outfit on etsy? (could be an initial tee?)

Pricier, but for DD's first bday we gave her a birthday ring from Spiel und Holz. I liked that it could be a new tradition and eventual family heirloom (maybe).

Anything personalized, monogrammed, etc might be nice.
If the family is patriotic, some people contact their representatives, etc. and ask to have a flag flown in the child's honor, and then for a fee they mail you the flag.

My IL's got DD a subscription to Babybug 'magazine' for her 1st birthday. They're like mini-books that come in the mail about once a month. Very cute, and she loves them.

If you're close to the parents, ask if she has a 529. 529s have deposit slips that friends/families can use to put in donations of any amount. I think that that would be a GREAT gift.
As for the gift, put a card inside a gift bag with lots and lots of different colored tissue paper crunched up inside. That was my DD's absolute favorite 1-year gift LOL, never mind whatever toy was inside it.

I just got a great initial t off Etsy for DD's bday. They also have some super cute croched beanie hats with flowers.
