The kind that are easy to make, can feed a group, and where you can findthe ingredients at a regular grocery store?
We will be going to a farmers market tomorrow too actually.
I have spaghetti and tacos down so far.

Chili, corn on the cob, BLT's, salad, pasta salad, fruit salad, taco salad, cheese and crackers, chips and dip... We share a house plus lunch time with other families when we go to the beach, and these work great for us. As you can see, some items are healthier than others.

Pita sandwiches with hummus, cheese, tomato, avocado

3 minute egg sandwiches (toast with scrambled eggs and cheese in the middle where you make the eggs in the microwave in a tupperware 2 at a time (nuke for 1:50).

Eggplant parmesan + garlic bread

We did hamburgers, spaghetti, homemade pizza and a few others I can't think of right now.....

Do you have access to a grill? If so I'd say grilled chicken breasts, and grilled pork loin (sometimes you can get B1G1 free on these at the grocery). Plus the usual hamburgers/hot dogs.

I found an amazing recipe for Mexican Lasagna from Pioneer Woman's site - it was SO good and I think the recipe is for like 20, I made it for our group of 15 when we went away last year, and we actually had leftovers. So you could halve it.

Yes. we have done this too. We have also done personal pizzas. Get the small Boboli crusts and jarred sauce and the fixings that everyone wants. Double check that the condo has some cookie sheets in the kitchen.

We got some of the Tyson refrigerated fully cooked steak strips to put on top to add some protein. They were decent. If you grill one night you could make enough leftovers (chicken or steak) to put on the baked potatoes the next night.

French toast casserole (breakfast for dinner) and bacon or sausage
lasagna
chicken salad sandwiches
sub sandwiches

Baked ravioli - frozen ravioli and a jar of spaghetti sauce
Chicken enchiladas
sloppy joes

Pork BBQ sandwiches with cole slaw and chips
Lasagne-homemade or a few of the frozen ones
shish k bobs and rice/buns
jerk chicken and rice and beans
we generally do seafood one lunch too

rotisserie chicken or buy a few whole chickens and season/marinate ahead of time, put them in ziploc bags. Pop em in the oven... make some corn on the cob, baked beans and a green salad... DONE!

Pulled pork or chicken sandwiches ... meat cooked in the crock pot. serve on rolls or hamburger buns, corn on the cob, coleslaw

fajitas ... chicken or steak (or shrimp) .. onions, bell peppers. flour tortillas, rice and beans.

lasagna ... my boys love stouffers frozen... they sell LARGE party sized ones. I would make some garlic bread and a green salad to go with it

1 night on vacation we usually have Idahoan intant mashed potatoes, some grilled or sautéed veggies and a bit of beef, which I then make pan sauce from and use on the potatoes. We essentially never eat meat and potatoes at home but there is something comforting about it in a condo or hotel kitchenette rental.

Fish Tacos.

Pasta with pesto, veggies and meat.

Definitely spaghetti with a big salad and lots of bread! We also always loved tacos, fajitas, sloppy joes, and breakfast-for-dinner.

I'd pick up a big pack of meatballs from Costco. They could go over pasta, on a sub roll w/ some sauce, or just sauce+meatballs on a plate with a side veggie.

Could be heated in micro, saucepan or crockpot. Easy.

Ditto the rotisserie chicken from a grocery store.

When we vacation we're near a costco and I totally hit that place up for a lot of easy meals (that way I still feel like *I* am on vacation...convenience food but way cheaper than a restaurant).

My mom would always make a large brisket ahead of time and just reheat it at the condo. We would have it for dinner one night, then the leftovers were awesome on baked potatoes or salad the next day.

Are you in Kaui? For DH and I our favorite meal is seaweed salad to go from the grocery and boneless fish filet to throw on the grill. Our DS is kind of a foodie so he will actually eat this sort of thing. Seaweed salad is way cheaper in Hawaii than in the places I have lived (east and midwest)!

thanks for all the ideas! I think we are set. We did hit up a costco as that was what DH wanted to do for Fathers Day. ;) we got steaks to grill, some premade pasta salad, peaches, salad, sandwich stuff cans of chili, corn on the cob, this huge pastry thing from the costco bakery, char siu, spam (when in Rome), ...... And that was just costco! I also got some packaged stuff at kmart that were things I hadn't had in a long time but it was nice to just grab the stuff and not even worry about the nasty ingredients because those were our only choices!
