We picked apples on Wednesday and I have not gotten to all the canning I thought I would. We are going to be crazy busy for the next week. Is there any way they will still be okay to can next Saturday? I am thinking apple pie filling and applesauce. They are golden delicous and empire apples. Thoughts?

I always store mine in the fridge as soon as I bring them home and they seem to last (with no ill effects) for several weeks.
I could be totally wrong, but they've never made us sick.

My grandparents didn't have electricity for years at their farm. They stored apples in a root cellar for months. My grandmother would make apple pies out of them for 2-3 months after she picked them and they were the most delicious pies ever.
When I get apples at the store, I keep them in a bowl on the countertop because I think they are pretty. They stay good for WEEKS.
Your apples will be just fine. ;)

Stick them somewhere coolish and you'll be ok, it doesn't have to be a fridge. Like a pp said, back in the old days, they didn't store apples in fridges. My mil is a crazy nut and one autumn she picked an ungodly amt of apples (she literally stored them in a box that her washer/dryer came in, like the kinds of boxes that kids make forts out of!). She stuck that box in the garage (obviously, she doesn't have a rodent problem), threw a blanket over the top and I think it lasted her like 6 mo+??? Autumn all the way through winter and probably some of spring. DH and I thought she was crazy, b/c it is just my mil and fil in their house now, nobody else. She didn't can or do anything else with the apples. She just ate them in their natural form. Needless to say, she didn't have problems meeting her daily fiber requirement that yr.
