Just make what Marisa listed - I used some of her recommendations for Thxgvg and they were the hit of the dinner!! (Roasted carrots & parsnips and sausage stuffing.)
ETA- I am totally struggling with what to make too, which is why I didn't offer any suggestions. And why I just might copy Marisa's menu.
LOL. Didn't that stuffing ROCK? That parsnips and carrot dish was good too. Still, I have dreams about that stuffing.

I went from not hosting anything to hosting Xmas Eve for 7 and Xmas Day for 10. AARGH! Here's the menu:
Xmas Eve:
Shrimp Cocktail & Smoked Salmon Canapes
Pasta with Walnut Sauce
Filet of Sole with Herb Butter,
Maple-Glazed Carrots, Citrus String Beans, and Fennel Confit
The traditional Provencal 13 desserts
Xmas Day:
Costco Puff Pastry Apps, Prosciutto/Mozzarella Roll, Mini Quiches
Filet Mignon Roast with Brussels Sprouts, Mashed Potatoes, Spinach
Buche de Noel and Cannolis
Nothing! We are at friends for Xmas eve and my little brother's/BIL house for Christmas dinner. We are hosting Christmas breakfast. A lot less work.
I HIGHLY recommend the parsnips/carrot dish and the stuffing from Marisa. We did both for Thanksgiving at they were amazing. The carrots and parsnips are now a regular menu item around here. The stuffing is a little much to be a regular thing (calorie wise) but it is delish

I've been very uninspired and am not a very good cook but was dazzled today at the grocery store, lol. I'm making this ham dish and crock pot green beans w/ham and onions. Oh, and mashed tatoes too. Not sure if it'll be Xmas day or eve as we haven't planned that far ahead...
Here's the recipe. You could use it for an every day meal if you want.
Ham With Sweet Onion Sauce
Ingredients
1 Deli fully cooked boneless ham (5-6 lb)
2/3 cup water, divided
aluminum foil
1 packet onion gravy mix (.87-ounce)
1 (8-ounce) can crushed pineapple in juice (undrained)
1/2 cup honey
1/3 cup cream sherry
2 tablespoons Deli-style mustard
Steps
1. Preheat oven to 325°F. Remove all packaging; place ham
in shallow baking pan (wash hands). Add 1/3 cup of the water to pan. Tent ham with aluminum foil, sealing edges tightly to the pan. Bake about 15 minutes per pound or just until internal temperature at center of ham is 130°F. Use a meat thermometer to accurately ensure doneness. Remove ham from oven and let stand 10-20 minutes before slicing (temperature will rise during stand time to 140°F).
2. While ham stands, combine remaining ingredients in medium saucepan until blended; bring to boil on medium-high, stirring occasionally. Slice ham and serve with sauce. (Makes 12 servings.)

Gourmet Green Beans
Ingredients
2 (12-ounce) bags fresh snipped green beans (snapped, if desired)
8 ounces pre-sliced baby portabella mushrooms (rinsed)
3/4 cup water
2 tablespoons garlic butter
1 tablespoon sesame seeds
1 teaspoon seasoned salt
Steps
1. Place beans, mushrooms, and water in microwave-safe bowl. Cover and microwave on HIGH 12-14 minutes, stirring once, or until crisp tender.
2. Preheat large sauté pan on medium-high 2-3 minutes. Place butter in pan; swirl to coat. Add sesame seeds; heat 1-2 minutes, stirring often, or until lightly browned.
3. Drain beans and mushrooms; add to pan. Sprinkle with seasoned salt. Reduce heat to medium; cover and cook 6-8 minutes, stirring occasionally, or until desired tenderness. Serve.

Well, technically, MIL is making it, but that usually means that I do at least a good portion of it! We are having a rib roast and twice baked potatoes. MIL says I am not allowed to smoke up the house like I did last time we did a prime rib. :P (It was really tasty, but the method was a little smoky!). The rest of the family will be bringing the other side dishes, and it will be cookies and ice cream for dessert. Yum!
