    Default Need an favor--Joy of Cooking recipe

    Hi,

    My copy of Joy of Cooking is packed (moved to temporary housing a couple of months ago and moving again in a couple of months). But I need to make cupcakes for DS' birthday in a couple of weeks and would like to use a recipe I am familiar with.

    Anyone have book and willing to post the Blitzkrieg cake recipe?

    I have the newest Joy of Cooking and can't find a recipe by that name, could it be called something else? Let me know and I'd be happy to send it if I can find it for you. :)

    Shoot, maybe they just describe it that way in the recipe write up. I know it's one of the first cake recipes in the book and it has lemon zest in it. Thanks for the offer, but I guess I just don't remember enough to help you help me! Maybe I'll send dh on a search mission for the book through the boxes in the garage.

    I have the 1995 version and I don't see it anywhere either. But I did find this online:

    From the Joy of Cooking, page 931

    Have all ingredients at room temperature

    Preheat oven to 350. Grease and flour one 8 X 2 inch round pan or line the bottom with parchment paper.

    Whisk together thoroughly:

    1 cup all-purpose flour
    1 teaspoon baking powder
    1/4 teaspoon salt

    In a large bowl, beat until creamy, about 30 seconds:

    8 tablespoons(1 stick) unsalted butter

    Gradually add and beat on high until lightened in color and texture, 3 to 5 minutes:

    1 cup sugar

    Beat in one at a time:

    3 large eggs

    Beat in:

    1 teaspoon grated lemon zest
    2 tablespoons fresh lemon juice

    Stir in the flour mixture just until smooth. Scrape the batter into the pan and spread evenly. If desired, sprinkle the top with a mixture of:

    1/3 cup chooped or sliced almonds or other nuts
    1 heaping tablespoon sugar

    Bake until a toothpick comes clean, 30-35 minutes. Let cool in the pan on a rack for 10 minutes. Slide a thin knife around the cake to detach it from the pan. Invert the the cake and peel off the paper liner, if using. Let cool right side up on the rack.
