    Corie,
    this is a super simple recipe from Rachael Ray. I made it once by following the recipe and also made it once by just adding a few drops of lemon extract because I didn't have a lemon...

    This is kind of boring but my mom makes great lemon bars. Here is her recipe:

    Melt 2 sticks butter
    Add 2 c flour and 3/4 c powdered sugar
    Pat into 9x13 sprayed pan and bake 20 min at 350 degrees

    Meanwhile mix well:
    4eggs
    8 Tbs lemon juice
    1 tsp baking powder
    2 c sugar
    4 Tbs flour
    1/2 tsp salt

    Pour over hot crust and bake for 25 min at 350 degrees. Let cool some and top with powdered sugar.

    Another person I received this from used 2 "cubes" of butter so that one may be a little more "figure friendly" than my moms :)

    From 101 Things to do with a cake mix...

    Lemon Squares

    1 lemon cake mix
    2 eggs
    1/3 cup oil
    powdered sugar

    Preheat oven to 350.

    Mix together cake mix, eggs and oil. Mixture will be stiff. Spread evenly into a greased 9x13 inch pan.

    Bake 13-15 minutes until slightly golden on top.

    Cool, then sprinkle powdered sugar over the squares.


    Lemon Refrigerator Cake

    1 lemon cake mix
    1 small package lemon gelatin
    1 small box lemon instant pudding
    8 ounces whipped topping

    Preheat oven to 350 degrees.

    Make cake as directed on box in a greased 9x13 inch pan (I use glass). Let cool.

    Poke deep holes into cake with a fork, spacing them about an inch apart. Dissolve gelatin in 1 cup boiling water. Then add 1/2 cup cold water to gelatin. Slowly pour gelatin mixture into holes. Refrigerate cake while preparing topping.

    Mix together whipped topping and instant pudding until stiff. Immediately frost cake. Store cake in refrigerator and serve chilled.

    This is also great with a white cake, strawberry jello and either the lemon topping or just whipped cream on top :)


    Lemon Poppyseed Cake
    Cake:
    1 lemon cake mix
    1 small box lemon instant pudding
    2 T. poppy seeds
    4 eggs
    1/4 cup vegetable oil
    1/4 cup applesauce
    1 cup water
    Glaze:
    1/3 cup lemon juice
    1 1/3 cups powdered sugar

    Preheat oven to 350.

    Mix together all cake ingredients. Pour into a greased and floured bundt pan and bake for 50 minutes.

    Invert hot cake onto a platter. Mix lemon juice with powdered sugar. Pierce the top of the cake generously with a fork and pour icing onto hot cake. Allow icing to soak into cake for 5 minutes. Ready to serve.

    Default super easy and yummy...

    Lemon Jello Cake

    Mix: ¾ Cup hot water with 1 large package lemon jello, set aside

    Beat: 4 eggs and ¾ Cup Wesson oil until well beaten,

    Add: 1 package Duncan Hines Lemon Supreme cake mix,
    1Tablespoon lemon juice and jello mixture and beat for 2 minutes.

    Pour into greased and floured bundt pan and bake at 350 degrees for 40 minutes…do not over bake, as cake should be moist.

    Topping: Mix some powdered sugar and lemon juice and pour over hot cake which has been pricked with a fork or toothpick. just eyeball the ratio until it's pourable.

    This sounds delicious!!

    Didn't they make a similar cake on "The New Adventures of the Old Christine"?
    I remember thinking that it sounded fabulous!! :)
