    Default Can you substitute pumpkin for applesauce in muffin recipe?

    While at TJ I found a container of Multi Grain Country Choice Organic Hot cereal. There was a recipe on the back for Applesauce Multigrain Muffins. I tried it and they were

    I tried the recipe with both regualr applesauce and berry-applesauce. I was wondering if I could use pumpkin instead of the applesauce. What do you think?

    Muffins
    1 cup Country Choice multigrain hot ceral uncooked
    1 1/2 cup flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp ground cinnamon
    1 cup unsweetened applecause
    1/2 cup fat free or low fat milk
    1/2 cup brown sugar
    1/4 cup sunflower oil (I used veggie)
    1 egg

    Steusel Topping
    1/3 cup Country Choice multigrain hot ceral uncooked
    2 Tbsp brown sugar
    1 Tbsp butter, melted
    1/2 tsp ground cinnamon

    Preheat oven to 400. Line 12 muffin cups with paper baking cups or lightly oil botttoms only.

    Prepare topping by mixing the oats, brown sugar and cinnamon together. Add the melted butter, mix well.

    Prepare muffins by combining oats, flour, baking powder, baking soda and cinnamon in a large bowl; mix well. In separate bown mix together the applecause, milk, brown sugar, oil and egg. Add to the dry ingredients and stir just until the dry ingredients are moistened.

    Bake for 18 to 20 mins. Remove from oven
