    Default Baked Oatmeal as a cookie? To eat in car?

    About a year ago, I seem to recall someone posting they amended one of the famous Baked Oatmeal recipes to make it as a cookie that they fed their LO's in the car on the way to school. I even think the poster had daughters (how weird that I remember that!)

    I am searching our MANY baked oatmeal posts....but perhaps someone has the recipe or OP will see this and help a mama out???

    I have made it as muffins and more cookie-like as well. The energy circle recipe in that post is similar.

    THANK YOU! Not the post that I remember specifically, but it meets the end goal of a baked oatmeal cookie! THANK YOU!!!!!!!!!!! I had looked at several threads, one of which had 41 posts and had not gotten to that one yet!

    i was just wondering the same thing. since school started we have been rushing out the door most mornings so i thought making baked oatmeal muffins would be handy. a cookie would be even better. can't wait to try it. thanks!
