    Kijip has given you a very thorough explanation of meat cuts. Wow. I've recently been hooked on the show, America's Test Kitchen on PBS and they always have a cow or pig graphic explaining where the piece of meat they are cooking comes from. I bought their cookbook at Costco recently and love it.

    An addition: skirt steak! It's the diaphragm. Made it last night with a stovetop grill pan, took 3-4 minutes, served with chimichurri sauce, and it was a complete hit - very juicy. SOO easy too. I got more than enough for the 3 of us for $7 at Whole Foods, which is a bargain.

    Thanks. That does help. I should print it out and keep it in my purse.

    I'm trying to branch out more, it'll be good for our variety. I'm heading to Costco tomorrow, to see what I can find. I need to find a good local butcher.

    I love skirt steak. I've posted this before, but it is absolutely fantastic with this marinade. Now I'm hungry.

    You'll be proud of me. I was at the grocery store and they had sales on meat. I got 9 top sirloin steaks for $13 rather than $38. I was standing there, thinking of this thread and the picture of the cuts of meat, and looking at the price, and snatched it up as it was the last one out.

    That's 3 meals for us, so $4 a meal.
    I also have a pot roast in the slow cooker.

    I'm making a list of prices to keep on my iPod, so I know when it's a good deal or not.

    We still won't eat a lot of red meat, but it'll be nice to have it in every other week or so.
