    Default Phew...I am tired..big day of cooking

    Well, maybe prepping.

    I went off to Costco and got chicken, steak, pork, fish, sausages, ham, turkey, bacon, cheese. Then I came home and bagged it into smaller serving size, made marinades, put a pot roast in the crockpot. With what I already have made in the freezer, plus 2-3 vegetarian meals a week, I think I've got enough for maybe 3 months.

    I know I'll appreciate it during the week, but it was a long day.

    I do. We had a southwest style pot roast last night. It was good. And I've got leftovers for 2 meals of burritoes or tacos or even pulled beef in a sandwich.

    We can't do too much red meat because of DH's cholesterol, so it'll only be a meal here and there, but we need to branch out a little. Getting bored with same old same old.
