    Monday - Spaghetti & meatballs
Tuesday - CrockPot Salsa Chicken (with rice & whole wheat tortillas)
    Wednesday - ???
Thursday - (whatever I want ... DH will be at a dinner meeting)
    Friday - ???

So ... I need dinner ideas on Wednesday and Friday.

(And I'd like at least one of them to be meat-free.)

Tonight: chicken enchiladas (finishing up leftover roast chicken)
Wednesday: chicken w/salsa, rice and beans, broccoli
Thursday: veggie stew with ground turkey
Friday: tuna casserole (DH is Roman Catholic, and I'm Episcopal. He uses Lent as an excuse to try to feast on expensive fish dishes on Fridays. Last friday he ate a lobster and crab creation! So much for purposeful sacrifice! I (when not pregnant) fast and eat soup and bread for dinner. I refuse to keep making salmon and other special treat dinners to satisfy his fish requirements. I'm guarding his immortal soul by feeding him canned tuna!!!)

Mon - Ham, mashed potatoes, green beans
Tues - Beef & Broc stir fry
    Wed - Tacos
Thurs - maybe roasted chicken with sides or chicken soup with bread (I'm going out for dinner with friends that night, so something easy I can leave behind, lol)
Fri - something meatless for Lent so maybe cheese raviolis or pizza
Sat - usually eat out or get take out
Sun - usually steaks on the grill

I'm impressed that you all can plan out meals like that. I never know what we're eating I'm always scrambling at the last minute and I can't even remember what we ate last night.

    In no particular order:

    Beef, mushroom and barley stew
    Pad Thai
Eating out on Wed night for a fundraiser
Stir fried beef and onions (we did a lot of chicken last wk) with rice and some sort of veg and rice.

I haven't thought much past this, since we might be away this wknd.
