    Default What's for dinner: Special Friday Lenten Edition (all are welcome!)

    Everyone is welcome to answer. But I need ideas, because as usual on the first Friday of Lent, I forgot to plan a meat free meal. Any suggestions? DH doesn't do soy BTW. I'm heading to TJs, so no fresh fish.

    Ditalini pasta with a can of tomato sauce and a can of TJ's vegetable lentil soup cooked together with a chopped clove of garlic as the sauce. So good!

    Every day is meat-free at the TxCat household, thanks to DH (DD gets a special dispensation though). There's a great Giada DiLaurentiis pasta recipe using canned tuna fish in olive oil, if you have that in your pantry - it's one of my weekly staple meals. Other options - homemade veggie burgers with zucchini or sweet potato oven fries, vegetable curry with black beans and garbanzos, veggie pot pie, vegetable soup with corn dumplings.

    well I just made split pea soup (with ham)
    and um ...

    2 meatloafs (turkey sausage and buffalo meat)

    Upside -- they are very good!!

    By coincidence the kids are having fish. The TJ's breaded cod. Easy for the sitter and they like it. We are going out to a cocktail thingy so I'm really not sure where or what we will actually eat.

    We are eating fish tacos I think unless my kitchen is very messy or smelly from the painting. If that is the case we will most likely go out for take out of some sort.

    We're eating at MIL's tonight so I have no idea what's for dinner. Before we made that plan, I was going to make bean burgers. They are super easy and very yummy. It is rare for DH to give full approval of vegetarian meals (I usually cook a meat-free dinner 1-2 times per week) but he raved about these burgers and the kids gobbled them up. LMK if you want the recipe! Did I mention they are easy??
