    I saw them make this on tv the other day and want to try it. Recipe is from a good bakery.

    The dough was very crumbly and dry, and you don't knead it at all - just form a crumbly ball. When you cut the cross on top, cut down about 3/4 of the way through the loaf so it cooks inside. I was going to leave out the caraway.

    Irish Soda Bread

    Ingredients:
    4 C. flour
    1/4 C. sugar
    1 tsp. baking soda
    1 T. baking powder
    1/2 tsp. salt
    4 oz. cool butter
    1 C. buttermilk
    1 large egg
    1 C. raisins
    1/8 C. caraway seeds

    Additional ingredients to brush on top of dough before baking:
    1/4 C. buttermilk
    1/4 C. melted butter (2 ounces)
    raw coarse sugar to sprinkle on top




    Directions:
    Preheat oven to 350.

    Mix flour, sugar, baking soda, baking powder, and salt in stand mixer on low speed until evenly distributed.

    Add cool butter and mix until butter is pea- sized.

    Add raisins and caraway seeds.

    Mix egg with 1 C buttermilk and add to mixer in steady stream until dough comes together.

    Weigh dough into 1 lb portions and shape into rounds.

    Brush with buttermilk-butter and sprinkle with coarse sugar.

    Slash cross on top with serrated knife.

    Bake for about 30 minutes or until bread is crusty and golden brown color.

    Wait for bread to cool a little before slicing then spread with butter.

    Sorry if this is too late, but I just saw the post. Here's the one I use:

    I substitute buttermilk for the milk & vinegar & it takes longer than 15 minutes to cook...more like 25 or 30. But other than that, it's easy, it's yummy & it takes very few ingredients.
