    Default rice side dishes

    anyone have any ideas/recipes to share for serving rice that is more than just plain rice?

    1 cup brown rice, cooked in 2 cups chicken broth, plus 1 tsp olive oil
    1/3 cup slivered almonds
    2 summer squash (zucchini or yellow), diced

    In large skillet toast almonds in a few tsp of olive oil (I never measure the nuts, but I put in enough to cover the bottom).
    Add squash, and cook until some pieces are browned. Cover, lower heat, and steam until the squash is tender.
    Dump in the rice, and stir to distribute the veggies.

    Risotto is always yummy, esp. as a side for fish or pork.

    saute a half an onion (finely chopped) till soft.... then add a chopped tomato (smoosh it rather than leaving it chunky) and saute. When it's done add 1 cup of rice (I use Basmati) and season with some lawry's seasoned salt and garlic powder.... stir till mixed well with the "tomato sauce". Add 2 cups of water and a cup of frozen peas and carrots. bring to a boil, cover and turn down to a very low flame for about 20 minutes. Fluff with a fork.
