The marshmallows taste great in hot chocolate, so I think I can accomplish this. OP, give it a try! If I can do it, anyone can! This is the recipe I used:

Full disclosure, I used light corn syrup and DID use a candy thermometer.
I have a question regarding the recipe, it says gelatin .75oz, is that the total combination of all 3 packs?

I thought marshmallows need eggs to be soft and fluffy and I'm surprised the recipe doesn't call for eggs.

That would be my expectation because I have a box of know unflavored gelatin in my pantry and it contains 4 envelopes totaling 1oz, so 3 envelopes would be .75oz.

So are these supposed to be stirred into hot milk to create hot chocolate or just eaten as a lollipop with flavors reminiscent of hot chocolate?

Yes, use 3 envelopes that are 0.25 each. My marshmallows are fluffy. They really taste like marshmallows, and they are fantastic in hot chocolate! They are spongy and sticky like marshmallows. You have to cut them out of the 9x13 pan and can use a combo of corn starch and powdered sugar to cut easier (it says this in the recipe).

According to the directions on the DIY ones, you are supposed to swirl in 4-8 oz of hot milk.

Hmm, I may have to give these a try.

ETA: okay I see to make the marshmallows, you need a candy thermometer. Any recs?

There is a delicious hot chocolate on a stick sold at Whole Foods.

Though it looks like they might not be too hard to make yourself.
