    I've been digging spaghetti squash. I usually roast the squash on the weekend and put it in a tupperware in the fridge. I have baked it with cheese and garlic, or sometimes I put it in a sauce with a few handfuls spinach.

    Sloppy joes are super easy (mine are more like BBQ style)...cook the meat with whatever sauce you like slap on some buns, add a side and you're done!

    Tacos are simple (we had those tonight because I needed easy and quick).

    Pulled pork (or beef or chicken) sandwiches are fast. Just throw the meat in a crockpot and add BBQ sauce about 15 min. before serving.

    Lots of things can be made with a rotisserie chicken: Chicken enchiladas, chicken casseroles, chicken pot pie, chicken noodle soup.....

    Breakfast for dinner is always a fun change and quick too.

    I can have meatloaf muffins on the table in about a half hour. Chicken tenderloins are quick in the oven too and you can put any kind of sauce, spice or seasoning on them.
