    Default Homemade salad dressings

    How long can they last and do I need to refrigerate oil and vinegar? Do you have favorite homemade recipes to share? Thank you

    I make a fresh batch every night. By batch, I mean I use a very small 1/4 cup measuring cup using a milk frother from IKEA to mix it. I use 1 Tbsp fresh local olive oil, 1 Tbsp balsamic/jalapeƱo white balsamic/rice wine/red wine vinegar, 1/2-1 tsp Dijon mustard, salt, black pepper, and sometimes other spices and honey.

    For an oil and vinegar dressing I usually do EVOO, balsamic, salt, pepper, a spoonful of Dijon mustard and a spoonful of honey or agave. I typically just make a small amount, enough for the salad so no need to refrigerate.

    I make this a lot- fresh each time. Not with homemade mayo (I have, but it's not necessary unless you make your own mayo and have it one hand. Any old mayo will do).

    This is a fab greek dressing and I store it in one of those good seasons carafes in the fridge, lasts about a week. Shake before pouring if you have it stored.

    I've been trying to lose some weight. So for my salad dressing I've been trying to cut out the oil/fat. Lately I've been doing just Balsalmic + Dijon mustard. I've also been experimenting with greek yogurt based salad dressings, but haven't found a great one yet. Sometimes I don't use any salad dressing. But I have to make sure I have something sweet in my salad like beets or dried fruit.
