I've been using the cheap Pumpkin Masters carving knives for several years now. There is a slightly larger knife for cutting the lid and then a finer one for the details. The kits don't usually come with any sculpting tools. So far, the just remove the skin on sections of our pumpkins, I use an old Wusthof vegetable peeler from culinary school days (like this one http://www.amazon.com/Wusthof-SILVER.../dp/B0000DJYDH).
The Pumpkin Masters knives do get dull and can break off from the handle so you might want to get two sets just in case.
