So we have a bunch of leftover baked potatoes from a family dinner. DH won't eat baked potatoes and DS may or may not depending on the day.
Anyone have ideas on how to 'upcycle' these into something delicious?

I like to refrigerate and then the next morning slice them thinly or dice and sauté in butter to have with eggs. You can throw in some diced onion and pepper too. Yum!

Twice baked potatoes. Just make them as normal, but put the mixture in a casserole pan to bake.
One of my favorite things growing up was having my grandfather's cheesy potatoes. He used cooled, boiled potatoes, but I'm sure baked potatoes would work too. He'd grate the potato into a pan with butter and let it get crispy. Flip it so the other side gets brown, add salt, pepper, and cheese, and you have the dinner I would often have at my grandparents' house!
