    Default Healthier green bean casserole recipie?

    We are hosting thanksgiving this year. The Campbell's green bean casserole dish is a staple for my family. Anyone have a healthier/fresher version of this that they love? I have seen many online but would prefer to make something someone has actually eaten and enjoyed. TIA!

    Do you really want to mess with perfection??? I'm actually serious, I know most people love the original tried and true recipe and look forward to it! I've had it with water chestnuts, soy sauce, and other variations, but the original is the best (and I will say I only learned of green bean casserole when I went to grad school in the US, growing up in Canada we didn't have it!).

    I made this one a few years ago and used frozen French style green beans instead of canned. This one does not use a can of soup, although I don't think it would qualify as healthier. I don't remember how it tasted, but I didn't make it again. However, we already do a three bean salad, and I did not grow up with green bean casserole and am not a huge fan to begin with, so don't let my review cloud your opinion. This recipe has lots of great reviews.

    I had to find a replacement recipe because of an onion allergy in the family. Pioneer woman makes green been casserole that is just amazing. I can't vouch for healthier, but it is at least from scratch.

    Well, I agree with a PP -- why mess with perfection? I cook very healthy most of the time, almost no processed foods, etc. But for holiday favorites, I'm pretty guilt-free about cooking the traditional versions, if we like them. I often make the traditional Campbell's version of the green bean casserole (but I sub frozen beans for canned b/c I can't stand canned green beans) -- and even add cubes of Velveeta cheese on top (terribly unhealthy, but to die for delicious)!

    I don't have any recipes that are supposed to mimic the standard green bean casserole in a healthy way, but if you're just looking for a fresher green bean side -- I have made both of the two green bean recipes below at holiday dinners in the past few years. Both use fresh green beans and don't have any creamed soup in them -- and both are absolutely delicious! We had people fighting over leftovers for both of these.

    Alton Brown's green bean casserole recipe is yummy, and was much easier than expected. Even the part of making your own onion topping was simple. No clue on whether it's healthier but no canned processed soup in sight so that's a plus.

    Not to hijack this thread but is your signature right and you JUST had a baby and are going to host Thanksgiving this year? WOWZA! Impressive!!!!!

    Thanks for all the great recipies. Can't wait to try them! I am not a huge fan of the original, so I am willing to "mess with perfection", lol.

    Aww, thanks. It will actually be easier for me to have Thanksgiving here rather than trying to schlep all of DS's stuff and try to keep DD entertertained somewhere else.

    I've used the fat free version of the soups and that helps! I've also made a fresh green bean dish with stir fried green beans and onion slivers, garlic (if you like), a splash of soy sauce, etc.
