Default Cold vegetarian appetizer for a crowd?

Any ideas for a cold vegeterian appetizer that'll feed a crowd? Preferably easy :-). Anything besides the obvious chips/salsa, veggies/dip, crackers/cheese. Looking for inspiration!

    One of my favorites!

I also do a corn, black bean, basil, avocado and balsamic dressing vinaigrette salad. All ingredients from trader joes (frozen corn, thawed).

My pasta salad is always a hit, and it's super easy! I use cooked Buitoni cheese tortellini and cut up red, yellow, orange, and green peppers, and throw in some fresh raw peas. Then I dress it with Wishbone Robusto Italian dressing. I use the whole bottle, because the pasta soaks it up. It's super delicious if not super healthful.

For something a little fancier, these figs are beautiful and delicious! I think the rosemary recipe is great, but I linked to the peppered one also because it has a picture of the figs. This is totally adaptable for crostini and fig jam.

When I want a vegetarian option, I usually do a Mediterranean/Greek inspired platter. Hummus, baba ghanoush, several kinds of good olives, dolmas, roasted peppers, a block of good feta, toasted wedges of pita, and some fresh vegetables.
