    MISSISSIPPI MUD


    2 cups flour
    2 cups sugar
    1/2 tsp. salt
    1 cup margarine
    3 Tb. cocoa
    1 cup water
    2 eggs
    1/2 cup buttermilk
    1 tsp. baking soda
    1 tsp. vanilla

    Sift flour, salt and sugar. Bring to a boil margarine, cocoa and water.
    Combine eggs, buttermilk, soda and vanilla. Add boiled mixture to eggs.
    Stir in flour mixture. Mix well.
    Pour into greased and floured 11/17 jellyroll pan. Bake at 350 degrees for
    20 minutes. (It’s normal for cake to rise in mounds.)
    Prepare frosting and pour it over cake as soon as it comes from the oven.

    Frosting –
    In a sauce pan mix
    1/2 cup margarine
    dash of salt
    1 tsp. vanilla
    3 Tb cocoa
    6 Tb milk.
    Beat in
    1 pound powdered sugar
    1/2 cup chopped walnuts or pecans

    I've been loving a simple puff pastry apple tart. Roll out the puff pastry, slice up and place apples (or pears) in a pretty way on top, with the edges rolled over for a crust. Paint some melted butter on top and put it in the oven. When it comes out, drizzle honey on it and you're done! Easy to make multiples, and cut into squares (make sure it's cooked enough though!).

    Nutella mousse

    Nutella + heavy whipping cream. Top with chopped Ferrero Rocher. Sometimes I add a little coffee when I whip the cream bc it enhances the flavor.

    I usu eyeball it based on my serving bowl size , but a quick Google suggests 1:2 Nutella:cream. You can't really go wrong bc more Nutella = more intense flavor, less Nutella = lighter flavor. I add about a tsp coffee granules, or if my Nutella looks like it needs softening (an already opened jar) then I'll add a few tbsp coffee and stir it into the Nutella before mixing the Nutella with the cream.

    Hope this helps! This is one of my standbys to take to potlucks...it literally takes less than 15 min start to finish.

    This sounds heavenly! Is this something that needs to be made just prior to serving? If you make it in advance, will it become runny or lose its consistency? Can you make it in advance and chill for hours?

    Yes you can make ahead of time and keep it in the fridge! That's typically what I do and just pull out at serving time.
