I picked up a jar of Private Selections Pumpkin Curry African Inspired Simmer Sauce at Kroger's yesterday, figuring it should taste good with veggies and tofu (we are vegetarian).

I googled for recipes, and there are a few on the private selections websites, but they have meat in them. One i can try to adapt, but not sure if it will work having not used the sauce before. I don't want to waste my veggies and make something we don't want to eat so wondering if anyone has any experience with this sauce.

While googling, I did find this pumpkin curry recipe in which you make your own sauce. I have all of these ingredients, so may end up making this before using the store bought sauce!
