In San Antonio:
ride on a river boat on the Riverwalk (and just spend time shopping and eating on the river in general) - The Christmas lights are so pretty!
Sea World and Six Flags, if this interests your family
The Alamo (at the very minimum walk by and get a picture of the outside; it's right off the Riverwalk)
Natural Bridge Caverns is close by (underground caverns)

We were just in Dallas in October and went to the Dallas World Aquarium and REALLY loved it. https://www.dwazoo.com/ We had also gone to the Texas State Fair and the guys went to an air show but we all agreed this was the absolute best place we went.
It is inside so you don't have to worry about weather and there is SO much more than aquarium stuff.
For San Antonio, I'd spend at least one day on the Riverwalk and Alamo (they are close by and can be done in one day if you have to). You might also want to visit a Mexican market there. We live in Austin and often drive down to San Antonio to take guests to the Riverwalk and Alamo because it is THAT big of a deal.

We also love the Dallas World Aquarium.
I would add go-kart racing (check height and weight for youngest), ice skating at the Galleria, the train exhibit at Northpark (if kids love trains). Ninja Gym, indoor archery range, climbing gym.
If you go to the Perot Museum or the Art Museum, have lunch at the lunch trucks across from the Art Museum (it's a short walk from Perot).
If you have time, the Ropes Course at Trinity Forest was a huge hit for the kids last year.

The surprise hit of our San Antonio trip was the Witte Museum. We ended up there when a rainy day scrapped our plans. The kids still talk about it! https://www.wittemuseum.org/
