    Default veggie lasagna with something besides lasagna noodles?

    DS asking for lasagna but we don't have any lasagna noodles. Wondering if I could make it with penne instead, which we do have. Has anyone done this? He doesn't like meat in his lasagna, but I did find a pasta bake recipe that looked like lasagna that contained ground beef.

    Sure. I make baked penne. I just put down a layer of penne and sauce, layer of my cheese mix, more penne and more sauce, as many layers as you like then sprinkle on mozzarella cheese.
    You simply omit the meat if you are following a recipe. Nothing crucial will change.
    I use ricotta, 1-2 eggs, dried spices like parsley, basil and oregano plus salt and pepper. I stir in Parmesan cheese and mozzarella into the ricotta too usually.
    Cover it with foil and bake 45 minutes at 350. Bake uncovered another 10 minutes.
