We are heading to Barbados with our family this summer. It is temperate year round and summer is off season with much more affordable rates. There is a range in topography and things to explore (or just lounge on beach too). It is far enough south that it is out of the main hurricane track. St. Lucia and Antigua were also on my list.

Three weeks in a tropical locale would be my choice. I would think something like Hawaii where it is easily to get 3 weeks worth of stuff at Costco, and other items that you would also be able to find on the mainland.
