Default Easy food ideas for a brunch other than….

Muffins, donuts, muffin-sized quiches, and fruit? I’ve been asked by the parent rep committee to bring something for a morning brunch. The thing I mentioned above are already being brought by someone else. Clearly the committee is looking for more ideas. I just don’t have any. I wish we had a Kolache restaurant around here to bring something breakfasty and savory. We don’t have anything like that (and I’m not attempting them from scratch).

Anyone here have any easy ideas for brunch food? I’m drawing a total blank. Extra points if it’s bite-sized and healthy.

Not healthy, but if you have a Casey's, their breakfast pizza is always a hit at our work breakfast.

Breakfast burritos. Cut them in half (or smaller).

Spinach Artichoke dip or shrimp cocktails. I also like to spread crustini with softened cream cheese, top with minced fresh dill then the tiny shrimp. Looks fancy, but it's easy.

I know there are already mini quiches, but I like egg casserole type dishes for brunch, like this smitten kitchen spinach and cheese strata: https://smittenkitchen.com/2009/12/s...cheese-strata/

If you want to avoid using bread, try: https://smittenkitchen.com/2016/01/l...eese-egg-bake/

    Mini pancakes
Mini chicken and waffles (pop a mini waffle on a skewer with a chikfila nugget)
Salad (I prefer a more tangy dressing for a brunch)
Charcuterie (cheese and crackers work at any time of the day, tbh)
An easy to make kolache is basically just a pig in a blanket.
