Default Anyone have a quick ham deli slice recipe for Easter?

OK, so we're unexpectedly going to relatives today for Easter dinner. They're fixing up a big ham dinner, which I'm sure will be lovely. I am a vegetarian, though, and pregnant, and these (old-fashioned 1st generation Sicilian) will not be happy if I eat "just sides".

Eep! What can I bring for me to eat? My go-to dish is a frittata or quiche but all our eggs are hard-boiled at the moment. The stores are closed! I do have a box of vegetarian ham deli slices....anything I could do to make a dish out of those?

Oh - that helped point me in a good direction - I don't have the ingredients for mac and chese, but I do have loads of cous cous and veggies. I like the idea of chopped up veggie ham vs trying to eat the actual stuff straight anyway. Thanks!
