Default Having a lunch and need options for gluten free

Please excuse my ignorance about gluten free--but I am a novice and want to make sure I have proper food selections.

I am having a lunch in a few weeks. One person has celiac's disease. He grew up not eating the gluten free options (he is in his late 30's), so he doesn't do any type of bread, sweet etc.... I am doing a lunchmeat platter and it comes with a side of cole slaw, potato salad and/or noodles. I'm going to opt for the potatoe salad. What ingredients (if any) do I need to make sure are not in the potatoe salad? Also, is hummus ok? What are my options for dessert (other than just fruit)? I'm trying not to signal him out, but to just make a meal that he does not have to do a lot of picking through.
