I did the corn cakes, tacquitos and some green veggie or fruit. I don't stress much about side dishes.

Corn Dog Mini-Muffins

I made these yesterday with Jiffy mix cornbread and a mini-muffin pan from Target (Kitchen Aid brand). 1 box Jiffy mix made 1.5 doz muffins (used a total of 3 Hebrew Nat. Reduced Fat Beef Hotdogs). Will be my new staple party appetizer, super, super easy and just like a state-fair corn dog!!

Easy Weeknight Chicken breasts with garlic
We make this at least weekly, and I still like it (I'm not the biggest chicken fan). This is hands down my favorite chicken breast recipe ever. Epic. Read through the reviews, and someone describes sauteing onions to put on top as well. This is a key step and makes it 10x better than without IMHO. About 30min from start to out of the oven (depends on how fast your oven heats and how thick the chicken is), so totally doable as a quick meal after a long day at work.

Haven't done this one yet, but have done with the refridgerated can of cinnamon buns. So much faster than cooking in the oven (including waiting for it to come up to temperature), it's really insanely good.


ETA: Cinnamon roll version

I'm surprised more people haven't jumped on this thread, hoping this will bump it back to the limelight.

OP the taquitos were GREAT!! So easy, and am going to try the instructions to make ahead and freeze for a beyond fast weeknight meal. I swapped out the chicken for leftover slow cooker pork pernil, and will totally make it again, and again....

I found this popcorn recipe almost a year ago and get rave reviews and make it a lot. The recipe is for caramel corn with snickers and chocolate on top but I just make caramel corn and skip the snickers/chocolate part. Fabulous caramel corn!!!
