Default meal ideas for vegetarian new mom

would love suggestions for a meal i can bring to a good friend who happens to be vegetarian. and b/c she's nursing, she's trying to avoid common irritants - garlic, onion, etc

How about quiche and a side salad? I would make spinach and cheese quiche, a salad, and some sort of bread (either whole wheat or something on the sweeter side, like banana bread/muffins).

cheese enchiladas, rice and beans, salad

Pasta (maybe something like a primavera ... penne pasta with lots of sauteed fresh vegetables zucchini, asparagus, carrot, bell peppers, green beans, yellow squash in olive oil (you can leave out the garlic) and a little butter .... some fresh basil would be nice and some parmesan cheese. serve with a green salad and a loaf of french bread

Vegetable soup might be nice too.... or a minestrone (with some beans for protein ... is she eating beans or avoiding for the gas factor?) with a salad and again a loaf of french bread or a baguette.

I agree with the PP who mentioned some muffins.... my neighbor made some muffins a few days after we got home from the hospital with DS2 and we all loved having them handy to just munch on! Banana muffins would be yummy ... throw a few semisweet chocolate chips... YUM!

My mom also made a big fruit salad... melons, grapes, berries. It was so nice to just grab the container from the fridge and quickly put some fruit in a bowl and have it handy while I was nursing.

For a change, or an addition, you could do fruit & the famous BBB baked oatmeal.

Spinach quiche or spinach pie (ricotta, , two eggs, mozzarrella, worcester, with a bag of squeezed defrosted spinach all thrown in a pie crust). Great for a new mom because it tastes pretty good at room temp or warmed.

noodle kugel w/ vegetables

cheese & vegetable meal in a kugel (I'd use ricotta instead of cottage cheese, or a mix of the two)
