On the out and about vein - I found Noodles to be EXTREMELY accommodating for food allergies.
Quiznos had bread we could eat (dairy/soy free) but they've changed their offerings so I'm not sure if that is the case anymore. Our local Quiznos staff are AWESOME about helping determine safe foods, though.
Jimmy Johns has their unwich lettuce wrap (but I was always still hungry after eating them).
For a nicer place I can't sing the praises of Maggianos enough. They have been by far the most accommodating place ever with food allergies. You speak to the chef and he/she helps you determine what is safe or what modifications can be made to make the food safe. It was here that I learned most places (including maggianos) that have olive oil for dipping bread mix olive and soy oil. Soy is more shelf stable...so just be aware of that.
