Default Kabobs - questions

I am going to try to make beef kabobs tonight, but have a couple of questions. Do you have to marinade your meat or can you just season it before you grill it? Also, I would love to hear how you make yours as I am just guessing at how to make mine!

I would season the meat, the same way I would a steak (salt, fresh ground pepper and garlic powder). Would also do veggie kabobs, ideally on seperate skewers to allow for different cooking times, but not necessary. I would season the veggies with evoo, salt, pepper and garlic powder or balsamic vinegrette in a pinch. I like to use onions, peppers, small tomatoes and mushrooms.

I use a tucson balsamic salad dressing that I find at WFs as a marinade. Put the chicken (what I use) and veggies on the kabob sticks, pour the dressing over and let sit for 20 mins to overnight. I flip them around as well.

I've used a Cook's Illustrated recipe that calls for a brief marinade in olive oil, salt, pepper and minced garlic, IIRC. It is really easy and tasty.
