|
I have eggs (36 from Costco), red peppers, cheese and artichokes on hand. DH is traveling this week so getting to the grocery would be hard. Anyone have any recipes for egg something that would use these ingredients?
Thanks for your help! Too much to do this week. |

LOL, this is what I call "Friday Night Surprise" (or today it would be Wednesday Night Surprise). I find whatever veggies I want (do you have an onion? maybe a little garlic?a can of olives? maybe a can of beans, rinsed? time to clean out the pantry!) and saute them in a little bit of olive oil. In a separate bowl, whisk however many eggs you want (8-12?), a little milk, some garlic salt (if you didn't have regular garlic) - 1/2 tsp, and whatever seasonings look good (it varies - taco seasoning, chili powder, italian seasonings, etc...), and then mix in the shredded cheese. Pour the stuff over your veggies and whatever else is in there and over medium heat, wait a couple minutes until the thing is set. Then throw the whole pan into the oven at 350 until a knife inserted comes out clean (20-30 mins, depending on how many eggs you used).
If you don't have a pan that transfers to the oven, you can just keep stirring so you have scrambled eggs with all sorts of goodness. Or, you can put the veggies in the bottom of a 9x13 and pour the egg mixture over that. Serve with a little salsa and it is yummy! Other favorites to add: chopped green chilis black beans tomatoes sun-dried tomatoes potatoes (hash brown type) bacon sausage ham chicken broccoli corn you get the idea... |
