Do you want to watch them when you don't have Internet access? The obvious answer is to use the YouTube app on your iPod Touch but it requires Internet access so I'm guessing that it doesn't meet your needs.

YouTube does not allow its videos to be downloaded but you can use a third-party service like KeepVid (http://www.keepvid.com) to download the videos in MP4 format. The download speed is often really slow. Once you have a copy on your computer, you might be able to use iTunes to transfer it to your iPod but you might have to first right-click on the file in iTunes and make an iPod-compatible version. I don't know if the KeepVid MP4 files can run without conversion.

There isn't an easier way. YouTube doesn't want their stuff downloaded. You can buy stuff off of iTunes or download video podcasts if you want to use it without an Internet connection.

There are several Firefox add-ons (try FlashVideoDownloader) that allow for easy, one-click (or close to) download of YouTube files (.flv and/or .mp4). Afterwards, you may need a conversion program to convert the file to an iPod compatible format.

Tutorials to download Youtube videos can be found on Youtube itself (try searching "download Youtube videos") and conversion programs can be found from download.com.

If you're not using Firefox, I don't know what else to tell you other than...start using Firefox! IE sucks!
