Default Vegetable recipes needed!

I just picked up tons of veggies from my CSA and need help figuring out to do with some of them. Does anyone have a great recipe for:

Beets (I've never had a beet I like!!)
Russian red kale
cabbage
radicchio
zucchini
pickling cucumbers

For beets ... boil them till fork tender, then cool and peel. put over a salad with mixed baby green, goat cheese and balsamic vinagrette. you can also roast beets in the oven ... salt and pepper and olive oil ... done.

For zucchini make zucchini bread/muffins ... otherwise I like them simply sauteed with some garlic powder and a splash of soy sauce.

You could make a yummy vegi soup ... cabbage, beets, zucchini, then add some tomato, potatoes, carrots, corn, broccoli, cauliflower etc.... whatever vegis you like really. salt and pepper to taste.

we always buy pickling or persian cucumbers .... like them better than the big ones (my DS2 doesn't love big seeds in cucumber) usually we peel them and slice em up and dip em in ranch dressing.... or just peel and chop into a green salad.

I read somewhere that someone make kale chips (roasted in the oven) never tried it myself though.

I have only ever heard of raddichio in salad ... could put it into the salad with the beets!

We like to slice the "little" cucumbers longways and put a dash of salt or pepper on them, then eat them raw, skin on. Yummy, crunchy and refreshing.

For zucchini, I will slice longways, drizzle with a little EVOO and salt/pepper, put in oven at 350F for 15 min or so, then crumble feta on top.

I will stir fry kale or chard or any of those greens with chicken and bell peppers; or slice into strips and put in an omelet.

I don't do beets and I don't have recipes for the others. I usually just have raw cabbage shredded on tacos; I don't dig its texture when cooked.
