Default Really good low-carb snack! Cheesy crisps!

So I came up with these little Cheese It cracker-like crisps while trying to make fried cheese (cheese you fry on the stove till it's crunchy). My fried cheese kept sticking and turning into a ball of mess so I searched online to see if I could make it some other way. I came across a recipe that said to just grate some cheese in little piles on a baking tray (covered with a Silpat or parchment paper) and bake. I tried it that way and it came out ok, but each wafer was super thin and I ate them all in about 10 seconds! The next time I took a block of Romano cheese, cut it into thin (about 1/16" thick) slices, laid them out on my cookie sheet w/ Silpat (about 2" apart), and baked at 400 degrees for 6 minutes. The cheese starts to melt and bubble up and then it starts turning from white to brown. After 6 minutes I kept checking on them and once they were fully brown (you don't want any white/yellow left since this will stay chewy) I took them out and let them cool. After they were cool they got hard like a cracker and popped off the Silpat easily. I put them on a paper towel to soak up any excess oil. Instant cheesy crisps! Nice and crunchy and they taste great with cream cheese spread on them! You can use any type of cheese. Parmesean/Romano will be more salty, but that's all I had. Next time I'll try cheddar. Yum! And they taste great broken up and added to a taco salad (instead of chips)! Cheese has almost no carbs so eat up! I think they'd work well paired with salsa or guacamole as well-- especially if you use a pepper jack cheese.

I have done that before, but the best ones are made with Kraft Deli Deluxe cheese in the microwave (runs away from forum quickly because I know processed cheese is a huge NO NO in many homes). I guess you could try it in the oven too, but the microwave is soo quick and easy. Let me know if you find a regular cheddar that works well for this but so far the Deli Deluxe works the best. The cheddar I used (Tillamook, probably) didn't melt and crisp up properly. I guess I could try it in the oven too.

Yes, please continue to share low carb ideas! I have done this with thin slices of dubliner cheese in the microwave, and it works well. . If I make a whole bunch I eat too much or the leftovers aren't as good.

Just tried this in the oven with pre-grated Parmesan. Yum yum. Just put them in little circles on a piece of foil. Not as uniform or pretty but still yummy!

I had some today with cream cheese and salami. Very good! I think I'll try some tomorrow with tuna salad. Great substitute for crackers.
