I'm planning to have the baby sleep in the pack-n-play bassinet, and I've got a PNP with the small-sized one. I've read that the regular PNP sheets are also used for the small bassinets--it's the same mattress, just folded up. But wrapping fabric around what becomes the sides and bottom of the bassinet seems like it would allow for excess fabric that could be a safety risk!

Should I just not use anything?

I am currently using a Graco Pack -n- Play as a bassinet and love it!
There is a bit of extra fabric when it's folded into position but as long as you put something down over the top of the sheet, it's fine. Those pack-n-play sheets are of the worst quality too! I was given a waterproof pad from the Martha Stewart Babies line from Kmart and it fits the bassinet perfectly folded over on itself once. I couldn't ask for a better fit or a better bassinet. I store all of my diapering needs in the bottom for now and it makes life so easy!
Good Luck!
