We are deciding which convertible seat to buy. Which is easiest to install in an older non latch car.
We have a 96 ford taurus.

I don't have a 96 Taurus, but our cars are both 93s. We have an Evenflo Triumph and a Britax Roundabout. I though the Roundabout was a tiny bit easier, and with the tether, seems rock solid. I love that seat. The Evenflo also installed tightly, it just took a little more grunting and tugging. I'd recommend either seat. There is a website with a carseat compatibility database, where you can match your car, model and year, with seats you are considering. If a CPS tech has reported on the installation, you can see the results. Just google carseat compatibility database, and I'm sure it will come up.

www.carseatdata.org might have your car and any similar model years to get an idea what seems to work best....I used to drive a 96 Taurus, actually (my brother lent me his for a summer right after I had my first baby...), and never had a problem installing a car seat in it.
