If an item had the Buy it Now option, but a bid was placed, BIN goes away, right? Now, if a bid is placed, and it *doesn't* say "reserve not yet met," does that mean there's no reserve?

Yep. BIN and reserve are separate things. An auction could have one, both or neither.
