Herb Seasoned Beef Rib Roast
2 teaspoons dried thyme
4 pressed garlic cloves
1 teaspoon black pepper 1/2 teaspoon salt
mix all these together in a bowl

6-8 pound beef rib roast small end
press the seasonings all over the roast

2 medium onions cut into slices
arrange the sliced onions in a baker

3/4 cup beef broth
pour over the onions

place roast on top of onions in baker fat side up
do not cover

cook 2hr.15min-2hrs.30 for medium rare (135*) or 2hrs.45min-3hrs. for medium done (150*) in a 350* oven

let stand 15-20 minutes before carving

Mushroom Sauce
8 ounces of mushrooms sliced
1/4 finely chopped shallots or green onions
1/4 teaspoon of dried thyme leaves
2 tablespoons butter
1 tablespoon balsamic vinegar
melt butter on medium high heat. cook and stir mushrooms, shallots, thyme and vinegar for 2 minutes.

1 cup beef broth
1 tablespoon cornstarch
wisk these together. add mixture to the mushroom mixture and stir until they come to a boil. boil 1 minute stirring constantly until thickened.

serve over slices of beef rib roast

I forgot to put the oven temperature in the recipe. I've gone back and added it now.
