Anyone on the Atkins diet? We are having friends over for dinner and they are doing the Atkins diet. They are bringing a salad we just have to provide dinner and dessert....any suggestions?

I can't help you much with desert as everything I've tried to make with Splenda has tasted horrible! Entenmanns is now making low carb products that are supposed to be good. You could buy one of the cakes and top with Ready Whip. Strawberries are a low carb item. You could make a strawberry shortcake with a low carb Entenmanns cake and Ready Whip.

If you got to the Atkins website, they have recipes listed that you can download for free.

For dinner, chicken, red meat or fish. If you have a Trader Joe's near you, they carry awesome frozen swordfish steaks. All you have to do is defrost, grill, and top with a pat of butter. You could also make a marinade but with Atkins, you have to watch what you put into the marinade as some additions could contribute to carb levels.
I make Steak on the grill about once a week. That's an easy one. For sides, you can steam fresh broccoli and offer butter as a topping as butter can be widely used by people on Atkins. I like to get freshly sliced baby Portobello mushrooms and saute them in some butter. There is also this stuff called Broccoli Slaw in the produce isle that can be used like pasta as a filler but I've never tried it. String Beans are a lower carb item as well.

Dinner is easy -
Expensive: rack of lamb w/new potatoes http://tinyurl.com/29zoc if they are at the phase 3 they can have a couple of small new potaotes, otherwise skip them.

Moderate: garlic pot roast http://tinyurl.com/yt2yx skip the veggies.

Inexpensive: roast lemon chicken http://tinyurl.com/22m6y - I have actually used the particular recipe it is easy and good

Serve w/ steamed asparagus (in season) drizzled w/lemon butter, green beans or broccoli and cauliflower.

For dessert I usually bought Bryers ice cream (it is full fat)and you got 1 scoop ~ 15 carbs (depends of the flavor!) and put real homemade whipped cream (add a little splenda) on it w/low carb chocolate syrup. Or sugar free jello in fancy glasses w/the whipped cream.

Now I am hungry!

Did you look in the South Beach diet book? They have a lot of yummy recipes. Why not fish for dinner, oven roasted veggies for the side, and for dessert, a ricotta creme? It's ricotta cheese blended with a bit of Splenda and almond or vanilla extract.
