Wanted: Cold Curry Chicken Salad Recipe

We went to a tapas restaurant last weekend and had a wonderful Cold Curry Chicken Salad. Does anyone have a good tried and true recipe they can share? Thanks!

I've never tried this, but it came in a KraftFoods magazine last week and I tore it out for use later. Does anyone else have a mound of such recipes that's a mile high? How will I ever get them organized?! I'm too picky to scan- they all have to be formatted the same way, so instead, they just sit in this huge recipe holder, dreaming of a better life :)

I hear you on the stack of recipes. One of my nesting projects was putting the stacks of recipes and ideas in binders. Needless to say, I have not kept up the project.

I got this out of "The Can Opener Gourmet" and I make it for lunch all the time -- very easy! My DH puts it on bread as a sandwich, and I eat it with canned pear halves to counteract the curry spice:

10 oz. can chicken, drained
6 oz. jar marinated artichokes, drained and chopped
1/2 cup raisins
1/2 cup mayo
1 tbsp rice vinegar
1 tbsp curry powder
1/4 tsp garlic powder
S&P, to taste

Mix all of the above thoroughly. Add S&P to taste, and serve. Enjoy!
