We're having a brunch for about 12 people and I wanted to make eggs benedict. I read somewhere that you can refridgerate poached eggs in water up to three days (?!). I wouldn't do it that long, but if I poached the eggs 2 hours before and kept them in cold water in the fridge would they still be safe to eat?

Yes, I've read that you can do that and then heat them up in some simmering water before serving. I think you'd just have to be careful not to overcook them.

My DH responds: yes they will be safe to eat but the yolks will not be runny. "People like runny yolks," I ask him. He tells me that's what people like about poached eggs.

I'm not a poached egg fan, in fact, I really don't like eggs. But DH wants to serve smoked salmon eggs benedict so I'm trying to making him happy since he doesn't ask for much.
