View Full Version : What can you do with fresh cranberries?

I bought a bag of fresh cranberries, and now I don't know what to do with them. I tried eating one...BLECH! Can I cook with them? If I throw them into muffins or something, do I have to boil them first, or throw them right into the mix? What else can I do with them? How long can I keep them in the Fridge?

Well, I know for a FACT they do not keep forever in the fridge, LOL, but they do keep a mighty long time. You can freeze them for at least a year.

You can also freeze them. In my house, we traditionally serve them with turkey, but they are also tasty with chicken. Here's my basic recipe:

1 bag cranberries
Juice and zest of one orange
One cinnamon stick
1 cup brown sugar
1/2 cup honey
1 1/2 cups water

Combine all of the above in a sauce pan and heat until the water is boiling and the cranberries start to pop. Reduce heat to a simmer and simmer for about 20 minutes.
Taste for sweetness. Cranberries are quite tart and everyone has a different opinion about how sweet/tart they should be.
Serve as a sauce with poultry and stuffing.

You can throw them in the freezer for now if you are not sure what to do. Muffins are easy to do. I get them and make cranberry sauce for Thanksgiving and Christmas. I use the recipe on the package, but it is basically a lot of sugar, water, and the berries. It is easy and always a hit. It does STAIN big time though! Wooden spoons (not bamboo ones like the Pampered Chef ones though), clothes, etc. So look out. :-) Enjoy them.
