Does anyone have a really good pumpkin pie recipe? I have to bring one to my mom's on Thursday. My husband wants one that you can really taste the spices in. Help!

Kris-

Here is a non-traditional upside down pumpkin cake from allrecipes.com (I LOVE this site).

I have it in my online recipe box, but have yet to try it - it gets 5-star reviews. If you want something more traditional, try searching the site for highly rated recipes.

Here is another non-traditional recipe that is SO GOOD! It has replaced the traditional pumpkin pie at our holiday table, it has all the same flavors as the pumpkin pie but is richer and creamier. I got the recipe from FOOD Network from Paula Deen of "Paula's Home Cooking". It's called Pumpkin gooey butter cake but it is not really a cake at all. It's made in a 9x13 pan and the crust is made from a yellow box cake mix so I think that's where the word cake comes from in the title. The crust is an actuall crust that you can't tell was made from a cake mix.

This is the one I always make and people always ask for it again:

1 15 oz can of solid-pack pumpkin
2 eggs, lightly beaten
1 12 oz can fat-free evaporated skimmed milk
1 teaspoon pure vanilla extract
3/4 cup firmly packed brown sugar
1 tablespoon cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon salt
1 unbaked deep dish pie crust (I am sure you could make your own if so inclined)

Position rack in lower third of oven. Heat oven to 425. In a medium bowl, which together pumpkin, eggs, milk and vanilla. In a small bowl, combine sugar, cornstarch, cinnamon, ginger, nutmeg and salt until well blended, then add to pumpkin until mixed.

Pour filling into pie shell to just below rim. Bake 15 minutes then reduce heat to 350 and continue to bake for 35 to 40 minutes, until knife inserted in center comes out clean. Cool before serving.

Here is my family recipe. This is a deep dark dense pie that you can really taste the spices in. I measure generously when it comes to the spices because I like it to be very flavorful.

Makes 2 pies. Can be cut in half for one pie.

preheat oven to 450

29 oz can of pumpkin (~3 cups)
4 Tablespoons molassas
1 1/2 cup sugar
4 teaspoons pumpkin pie spice
1 teaspoon salt
2 Tablespoons flour
4 eggs
3 cups milk

mix all ingedients until well blended. Pour into 2 unbaked pie crusts.

bake at 450 for 10 minutes
reduce heat to 350 and bake for 45 minutes or until set in the center.

There is one on kraftfoods.com that is made with Cool Whip and instant vanilla pudding in the mix. Its called Double layer Pumpkin Pie. Its almost like a layer of pumpkin pie and a layer of cheesecake on the bottom. VERY good!! I make it every year, by request, for the family Thanksgiving get together. The pumpkin layer is mixed with the regular spices and the vailla instant pudding and the ceesecake layer is mixed with cream cheese, sugar, and Cool Whip. Its chilled for about 4-5 hours and served. No baking required.
