I have a cookie swap coming up and really want to use my leftover Reeses peanut butter cups (snack size)from Halloween. Anyone have a recipe using crumbled Reeses?
Also, maybe we could post favorite cookie recipes for an online cookie swap: Here's one of my favorites and it is very easy!
Chocolate Ganache Sandwiches
1 12oz bag semisweet chocolate chips
2 cups heavy cream
2 9oz boxes Nabisco Famous Chocolate Wafers
Melt chocolate chips in the heavy cream over low heat, stirring occasionally until well blended. Remove from heat and place in refrigerator until cool but not firm. (Can be made up to 2 days ahead). Beat the chocolate cream with electric mixer until light and fluffy, 3 to 5 minutes. Assemble the cookies with 2 chocolate wafers and a few tbsp. of ganache. If you like crispy cookies and creamy filling assemble these as close to serving as possible. For a softer dessert, make one day ahead and keep them covered in the refrigerator. The chocolate wafers will absorb some of the ganache and become cakelike. Yummy!
