View Full Version : Need a good but easy potato recipe

I am looking for a good and easy potato recipe to serve at a cook out on the 4th. I need to make enough for about 15 people. So I was thinking maybe someone would have a good casserole or something. I will have access to an oven up until we serve it so that is not a problem. I was thinking something I could maybe put together in the am and just cook right before we needed it, but I am up for anything. I need a new recipe I am tired of my current ones. Any sugges,tions!

Party Potatoes! This is suck a simple, community cookbook-esque dish, but it is delicious.

-Two bags of those frozen mashed potatoes and milk to mix with them
-1 or 2 8 oz. block cream cheese, depending on how rich you want the potatoes to be
-1 16 ounce tub of sour cream
-butter
-salt & pepper
-chives (optional)
-paprika

Cook the potatoes according to the package directions - maybe add a little less milk than what is called for since you're adding so much enrichment

Mix together the potatoes, the cream cheese, and the sour cream, and the chives, if wanted, and salt and pepper to taste

Spread it all out in a greased rectangle casserole dish

Dot the top with butter and sprinkle with paprika

Bake at 350 for about 45 minutes or until the edges are golden and bubbling

Take a zip lock bag...throw in olive oil or veggie oil
throw in a packet of lipton onion soup mix (two if you over make)
and then throw in cut potatoes

throw contents of bad after you have meshed them all with your hands fromthe outside of the bag into something to bake them in...

bake about an hour...mix at about 30 minutes

this recipe is on lipton onion soup mix

Everyone loves it!!!

How about hashbrown casserole? I never knew it was supposed to be a breakfast dish until I went to a brunch once. It's super yummy and really easy. Let me know if you need a recipe.

German Potato Salad.
I made it yesterday. Soooooo yummy. You can make it the day before and serve it cold or serve it warm. I prefer it after it has sat in the dressing for a day.

I just threw it together so I don't have any real measurements....
Red Potatoes-I think about 2lbs- in large cubes and cooked until al dente
1 package of Kielbasa-I boil it for 5 minutes even though package says already cooked
1 large bunch of scallions finely diced
Mustard Vinaigrette-Sherry vinegar, grey poupon, tsp of sugar, tarragon, olive oil.

Toss it all together and serve either warm or cold.

I know-its a little vague but anyone who likes to cook can whip it together in no time and it is so good. I hae never had a recipe for it. I had it once at a barbecue and vowed to remake it. This is what I came up with.

Okay. I'm back.

Hashbrown Casserole:
1-32oz bag frozen hashbrown potatoes, thawed(or not. I've done both)
1-10.75oz can cream of chicken, undiluted
1 C shredded cheddar cheese
1 C margarine/butter, melted and split into 3/4C and 1/4C
1/2 C onion(I've made it w/out onions and it's just as good)
8oz. sour cream
2 C corn flakes, crushed

Combine all except flakes and 1/4C butter. Spread into greased baking dish(9x13). Crush flakes and combine w/ butter. Sprinkle over potatoes and bake at 350 for 50 minutes.

I might make a double batch for 15 people.

Yummy! I'm going to have MIL make it for us this weekend. :)

here's mine. SOOOOOO easy and everyone *thinks* you are a great cook. seriously, everytime i take this i get asked for the recipe and looked at like i know how to cook. i stole it from my mom who also gets the same result. (neither of us are "good" cooks, LOL. its just a great dish.)

its a creamy, shredded potato dish with crunchy corn flakes (special k works too) on top. its fab.

its also idiot proof, it can bake for an hour or 2, it really doesn't matter. we've also baked it at a variety of temps depending on what else is in the oven.

its easy to re-warm and is GREAT as leftovers (and i generally hate leftovers). you can also slim it down with lower fat stuff and its still great.

Crunchy Potatoes

In a disposable tin foil 9x13 pan mix:

2 lbs frozen shredded potatoes
1/4 cup margarine
1 teas salt
1/4 teas pepper
1 can cream of chicken soup
1/2 cup chopped onion
2 cups (16 oz) sour cream
10 oz grated cheddar cheese

Topping:
1/2 cup butter or magarine, melted
2 cups crushed Corn Flakes

Mix topping ingredients & sprinkle over potatoes

Bake 1 hour @ 350 degrees.

Enjoy!

(i'm copying all the other ones too. can never have too many easy potato recipes!)

Someone is allways assigned to make this recipe for our family parties -

to make it less "sticky" and more "creamy"
add a cup =/- of milk
and
1/2 cup instead of 1/4 cup margarine

also, I always include 1 medium onion, finely chopped

This is a Cooking Light recipe. It doesn't taste light to me. Of course, I have been known to add extra cheese to the top. :) My favorite reduced-fat cheese is Cracker Barrel 2% Extra Sharp. The recipe says it serves 9, so you might want to double it. I've made it with both Southern Style (small square-ish chunks) and regular hash brown shaped potatoes.

Hash Brown Casserole

1 cup thinly sliced green onions
1 cup (4 ounces) shredded reduced-fat extra-sharp cheddar cheese
2 tablespoons stick margarine, melted
1/4 teaspoon pepper
1 (32-ounce) package frozen Southern-style hash brown potatoes, thawed
1 (16-ounce) carton fat-free sour cream
1 (10 3/4-ounce) can condensed reduced-fat, reduced-sodium cream of mushroom soup, undiluted
Cooking spray
1/2 teaspoon paprika

Preheat oven to 350°.
Combine first 7 ingredients in a large bowl; spoon into a 13 x 9-inch baking dish coated with cooking spray. Sprinkle with paprika. Bake at 350° for 1 hour or until bubbly.

Not hard, but kind of tedious to make, so I make it like 3 times a year....LMK if you want the recipe, as I'm to lazy to post in case you don't want it ;)
