Has anyone ever gone on a wheat-free diet? I'm going to try eliminating wheat from my diet because I think I may have endometriosis and eliminating wheat is supposed to help alleviate symptoms. I also have chronic allergies and I think going on an elimination diet may help with that too (apparently women with endometriosis also tend to have higher rates of allergies and candida (yeast infections) and low thyroid levels-- as do I). So I'm looking for good tasty wheat-free products and I'm finding that so many things contain wheat flour-- including my favorite cereals, granola, pasta, and granola bars :(. I was at my local health food store and picked up some spelt bread that tastes ok, as well as some rice tortillas (not so good). Has anyone ever tried corn or rice pasta? My health food store has a good assortment, but I'm not sure what brand to try. Can anyone recommend some good tasting wheat-free tortillas, cereals, granola, pasta, etc?

Both my husband and DS have been on wheat free diets at different times. Overall, Spelt was the best substitute. You can find most grain products with spelt, including pastas, tortillas, bagels & cereal. I've found a lot of wheat free products at Trader Joes and Whole Foods. There are also some wheat free waffles out there, but I can't remember who makes them.
